Beans Great Northern

Great northern beans should be pre-soaked in plenty of cold water. This removes the naturally occurring lectin and saponin found in many pulses, which can impede digestion.

Drain, rinse well and place beans in a pot of cold water, ratio 1:2. Bring to boil, then reduce to simmer until tender. Cooking on lower heat will prevent the skin from coming off and beans splitting. tThis is about 1/5-2 hours/ Do not add salt while cooking, as this can make the outer skins of legumes tough.

Great in soups and stews as they hold their shape better than Navy beans, take on the flavours of the foods they’re cooked with, and are commonly used in French cassoulets.
